Pizza Rolls
If you are looking for something fast and easy for lunch, dinner, or a snack this is it! It is the easiest recipe.... heck you don't even have to cook...you just kind of put it together, throw it in the oven, then eat it! Pretty much just as easy as calling your local pizza place and just as good! The best thing is you can change it up and put whatever fillings you want.... especially for those picky eaters.... *clears throat and looks away*
Ingredients:
1 Can of crescent rolls
24 Pepperoni Slices
1-2 Cup(s) of shredded Mozzarella cheese
1 Tbsp of butter
Pinch of salt, garlic powder, and Italian seasoning
Parmesan Cheese (optional )
Directions:
1.) Preheat the oven to the the temperature according to the can of crescent rolls
2.) Open the can and separate the crescents. Place 3 pepperoni slices on each crescent, then sprinkle about a 1/4 cup or less of the cheese on the crescent, roll it up like a usual crescent roll, and place it on the cookie sheet. Continue until you have finished all the crescent rolls.
3.) Place in oven for 9-11 minutes.
4.) Melt butter in microwaves for 30 seconds to 1 minute, mix with salt, garlic powder, and Italian seasoning.
5.) When rolls come out of the oven, brush with butter mixture, and sprinkle with Parmesan cheese.
6.) ENJOY!

Banana Chocolate-Chip Muffins
Casey and I both absolutely love bananas. That means an actual banana or anything banana flavored! However every time I buy bananas at the grocery store I can never use them all up and eventually they go to waste. This past week was no different. I had bought bananas and of course had a couple left over so I found this recipe and decided to give it a try.... I mean bananas AND chocolate....put it in a muffin and call it breakfast.... sounds good to me!
Ingredients:
1 stick butter, softened (or 1/2 c. butter)
1 c. sugar
2 eggs
1 tsp. baking soda
1/2 c. sour cream
2 bananas, mashed well
1 1/2 c. flour
1 tsp. baking powder
1 tsp. vanilla
1 (6 oz.) pkg. Nestle's semi-sweet chocolate morsels
Paper muffin cups
1 c. sugar

1/2 c. sour cream

1 1/2 c. flour
1 tsp. baking powder
1 tsp. vanilla
1 (6 oz.) pkg. Nestle's semi-sweet chocolate morsels

3.)Dissolve baking soda in the sour cream. Let it "rise" for a minute, then add it to the butter and egg mixture. Mix well with beater on medium speed. Add bananas and blend in.
4.) Add flour and baking powder together. Mix in thoroughly, but no longer than necessary. Add vanilla. Stir in chocolate chips by hand. Fill muffin cups. Bake for 25-30 minutes. Recipe makes approximately 1 1/2 dozen.

Pizza Puffs

So I kind of love pizza. I could probably eat pizza for a decent amount of time before I would get sick of it. So when I saw these on one of my favorite food blogs... I instantly bookmarked it. This is a great recipe to make for a snack or light lunch to get you through the rest of the day until dinner. I also thought about making these when I make Italian style dishes instead of the common garlic bread.... just an idea.
Ingredients:
3/4 cup flour
3/4 teaspoon baking powder
3/4 cup whole milk
1 egg, lightly beaten
1/2 tsp. Italian seasoning
1/4 tsp. garlic/onion powder blend
4 ounces mozzarella cheese, shredded (about 1 cup)
1/2 cup pizza sauce or your favorite dipping sauce
Directions:

4.) Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, about 25 minutes.
5.) Microwave the pizza sauce until warmed through. Serve the puffs with the pizza sauce for dipping.
* I have a big kid here, I just used my regular muffin tin and doubled the recipe so that it filled all 12 muffin tins! I also added about 10 minutes to the oven time because I used the big muffin tin!
