Pizza Rolls
If you are looking for something fast and easy for lunch, dinner, or a snack this is it! It is the easiest recipe.... heck you don't even have to cook...you just kind of put it together, throw it in the oven, then eat it! Pretty much just as easy as calling your local pizza place and just as good! The best thing is you can change it up and put whatever fillings you want.... especially for those picky eaters.... *clears throat and looks away*
Ingredients:
1 Can of crescent rolls
24 Pepperoni Slices
1-2 Cup(s) of shredded Mozzarella cheese
1 Tbsp of butter
Pinch of salt, garlic powder, and Italian seasoning
Parmesan Cheese (optional )
Directions:
1.) Preheat the oven to the the temperature according to the can of crescent rolls
2.) Open the can and separate the crescents. Place 3 pepperoni slices on each crescent, then sprinkle about a 1/4 cup or less of the cheese on the crescent, roll it up like a usual crescent roll, and place it on the cookie sheet. Continue until you have finished all the crescent rolls.
3.) Place in oven for 9-11 minutes.
4.) Melt butter in microwaves for 30 seconds to 1 minute, mix with salt, garlic powder, and Italian seasoning.
5.) When rolls come out of the oven, brush with butter mixture, and sprinkle with Parmesan cheese.
6.) ENJOY!

Buffalo Chicken Pizza with Bacon and Onions
It is a known fact that if you live in Savannah, Ga and you want pizza everyone tells you to visit Vinnie's. While Vinnie's does have great pizza.... Casey and I both agree we love Mellow Mushroom pizza better.... yum! I of course always order the same thing, exciting pepperoni pizza.... and maybe if I am up for it... add bacon (my favorite all time food). Casey on the other hand always orders their buffalo chicken pizza. Problem is if we ever crave or want to go to our favorite pizza hot spot we must drive downtown, find parking, walk to restaurant ( we sound lazy)... but sometimes you just aren't in that mood and to make it worse you are starving!
So I decided hey... lets try this whole make pizzas at home! Turns out it was a success! This one gets the hubby approved stamp! He loved it! He even said we don't even have to go to Mellow anymore... but for some reason I felt he was being a little extreme... and nice. :)
Ingredients:
3 slices of bacon (cooked and crumbled)
1/2 a small onion thinly sliced
1 package of pizza dough ( and whatever it calls for.... mine required water and oil )
2 tablespoons of ranch dressing
4 tablespoons of your favorite buffalo sauce/chicken wing sauce ( a little more for drizzling )
2-3 Chicken breast
1 cup of mozzarella
Directions:
1.) Make pizza dough according to directions (use their oven temperature). Spread dough on pizza sheet/cookie sheet.
2,) Cook bacon, drain, then cook onions in bacon grease until tender.
3.) Cook chicken with salt and pepper until done. Then Shred. Add 2 tablespoons of buffalo sauce to shredded chicken until all chicken is coded with sauce.
4.) Mix 2 tablespoons of ranch and 2 tablespoons of the buffalo sauce until well mixed and spread on the pizza dough.
5.) Add chicken, then mozzarella, bacon, and onions to the pizza dough. Drizzle with the buffalo sauce and put in the oven for 15-18 minutes (follow your pizza dough instructions).
*This recipe was so simple and easy to make and soooooo worth it! Next time I will double the dough and some other things just so Casey can have more for left overs.... one of the best parts of having pizza!

Sausage Cheese Puffs
Good Morning!
Ever since I entered my 3rd trimester of pregnancy I can not sleep. It is very frustrating to start your day at 3am. However this lack of sleep has made me look forward to making ( and eating ) breakfast. This recipe came from my Great Aunt Betty's cook book! It was one of my go to recipes and every time I make them Casey can't wait until they get out the oven, and then usually burns his mouth on them. These are sooo easy to make and are sooo good. I make them for breakfast, but they would be a great snack or appetizer.
Ingredients:
1 lb. of ground sausage ( can use original, maple, or spicy)
2 1/2 cups shredded cheddar cheese
2 cups biscuit mix
1/2 cup water
1 teaspoon baking powder
Directions:
1.) Preheat oven to 350F
2.) Mix all ingredients in a large bowl ( I find mixing by hand is the easiest )
3.) Shape into 1 inch balls
4.) Place on greased baking sheet ( I use tin foil )
5.) Bake about 25 Minutes or until golden brown

Honey Lime Chicken Enchiladas
Source: Stephanie Cooks
Sooooo did a mention I was picky? Well every time I go to a Mexican restaurant I get the same old thing, cheese enchiladas, and if I am really hungry a side of beans. Well I saw these on another food blog and thought they sounded delicious! Well this recipe called for the green enchilada sauce, well of course that is different and I didn't want to risk cooking something I wouldn't like so instead of the green sauce I used the red sauce, thinking hey no big deal!
So when I made these for dinner one night and we were just sitting down at the dinner table, my husband gets the first bite, then I take a bite..... I loved it! Casey on the other hand looked as though he was gonna barf. Ummm I was confused because I believed with the red sauce it was good balance of spicy and sweet. Obviously not the right combination to him, although very funny in the end. I asked him what he didn't enjoy about the dinner and he said it was like the sauce doesn't match the dish.... umm... is he psychic? How did he know I switch things up a little?
Well as we finished dinner we both got up to take the dogs outside when I finally said.... " I have a confession to make." I told him what the original recipe stated and of course he then knew it made sense and that he would have enojoyed that instead of my altered recipe. Good to know! Also good to know I have a live in tester for all my recipes!!!
Ingredients:6 tablespoons honey
5 tablespoons lime juice (1 large lime)
1 tablespoons chili powder
1/2 teaspoon garlic powder
1 pound chicken, cooked and shredded (I used rotisserie chicken)
8-10 flour tortillas
1 pound monterey jack cheese, shredded
16 ounces green enchilada sauce
1/2 cup light cream
Directions:1.) Mix the first four ingredients and toss with shredded chicken. Let it marinate for at least 1/2 hour.
2.)Pour about 1/2 cup enchilada sauce on the bottom of a 9X13 baking pan.
3.)Fill flour tortillas with chicken and shredded cheese, saving about 1 cup of cheese to sprinkle on top of enchiladas.
4.)Mix the remaining enchilada sauce with the cream. Pour sauce on top of the enchiladas and sprinkle with cheese. Bake at 350 degrees for 30 minutes until brown and crispy on top.
